Regional American Comfort Food

Walker Valley, New York

Walker Valley was originally settled in the early 1700’s and originally called Jamestown. The majority of the land was owned by the Walker family with 1000’s of acres, ultimately the town was named Walker Valley (circa. 1862) after the Walker’s. They had donated the church, the cemetery and at one point owned lakeside the property where Third & Company is today.

The hamlet of Walker valley may be small in size spanning 2.1 square miles and about 800 people, but huge in community spirit! We are located on the Western side of the Shawagunk Ridge in Ulster County and on the boarder of Orange and Sullivan County.  There is so much to do with in a short drive of Third and Company Lakeside such as:

Third and Company Lakeside Inc.

Located at 3649 route 52 walker Valley/Pine Bush NY 12566 was originally built in the mid 1850’s. It was owned by many families and served as a church, stable, ice house, soda shop, rest stop, grocery store, gas stations, deli, pizza places and more. It had caught fire in 2013 and cause significant damage to the property as well as smoke damage to the apartments. In fall of 2015 Joseph Russek III of Third Generation Homes purchased the property and started a massive project of restoring the building. Third and Company Lakeside or 3rd&Co for short has been a lifelong dream for Joe. His background was in the restaurant business starting in Pine Bush high school & The Orange-Ulster Vo-Tech culinary program (class of 1996) then attending The Culinary Institute of America (class of 1998) in Hyde Park NY. He was able to travel the world cooking his way to executive chef with restaurants and hotels like The Mansions at MGM Grand Las Vegas NV, The Shore Club South Beach Miami FL, Mi Casa Puerto Rico, Cafeteria NYC, The Peninsula Hotel NYC, Brasserie 360 NYC as well as time spent in Asia. Joe left the restaurant business to raise capital towards opening his own place; he did this through real estate development. Often asked what is the meaning behind “THIRD”? Joe’s grandpa died when he was born and a dying wish was for his grandson to be called third… Joseph Charles Russek III. He has always been honored and humbled by this and maybe part of his live life to the fullest attitude. Third and Company Lakeside literally means Joe and his friends at lakeside

Chef Jared Lozupone started cooking for others at the age of 13. That’s when his mother started teaching English to adults at night.  She would leave half prepared meals with detailed instructions that he would cook for his brother and father. Soon he started making up his own dishes and that’s where a true love of creative cooking was born. While attending New York Restaurant School, this Brooklyn native honed his culinary skills working at a local pizzeria’s. After graduating he went to work at critically acclaimed restaurants such as, Tribeaca Grill and Crispo. He rose through the ranks to Sous Chef before beginning his work at Bolo, Bobby Flay’s New York Times Three Star rated restaurant. While there, Jared was chosen to open Bobby Flay’s first international restaurant, Mesa Grill, Atlantis, on Paradise Island in the Bahamas.  There he helped turn a crew of young cooks into the power-house behind the hotel’s top JD Powers rated restaurant.
